3 1/4 c. all purpose flour
1 c. sugar
3 t. ground cinnamon
1 t. baking soda
1 t. baking powder
1 t. all spice
1/2 t. salt
3 eggs
3 cans (15 oz each) sliced pears, drained and mashed
1/4 c. unsweetened applesauce
1/4 c. canola oil
Preheat oven to 350 F. Combine all dry ingredients in a large mixing bowl. In a separate box whisk eggs, pears, applesauce and oil. Stir ingredients into dry mix just until moistened.
Pour into four 5 3/4" x 3" x 2" loaf pans coated with cooking spray. Bake for 50 - 60 minutes or until toothpick comes out clean. Keep loafs in pans for 10 minutes after coming out of oven before taking them out to cool on wire racks.
