2 chicken breasts, skinless, boneless, cut into bite size pieces
1/2 green and 1/2 red large pepper
1 tsp chili powder
1/2 c salsa, divided
1/8 - 1/4 pkg low fat plain cream cheese, cubed
1/2 c double cheddar light shredded cheese
4 small whole wheat tortillas (or 2 large sliced in half)
Preheat oven to 375. Spray skillet with cooking spray and add chicken, peppers and chili powder. Cook over medium heat for 5-10 minutes or until chicken is cooked through. Add 1/4 c salsa and cream cheese, cooking for approx. 3 minutes. Add 1/4 c shredded cheese and mix thoroughly.
Divide chicken mixture onto tortillas and roll up. Place in a baking sheet seam side down. Top with 1 Tbsp of salsa and shredded cheese each. Bake for about 20 minutes or until heated through.
Serves: 2 - 2 tortillas each
