Cauliflower Pizza

1 c. cooked, riced cauliflower
1 c. shredded light cheese, divided
1 egg, beaten
1 tsp dried oregano
1/2 t. crushed garlic
1/2 t. garlic salt
pizza sauce, and your choice of toppings.

Take 1 large head of fresh cauliflower, remove stems and leaves and chop the florets into chunks.  Pulse in food processor until it looks like grain.  If you don't have a food processor it can also be grated.  Place cauliflower into a microwave safe bowl and microwave  for about 8 minutes.  Do not add water as the natural water in the cauliflower will be enough to cook it.

One large head should produce approximately 3 cups of riced cauliflower.  Save the remaining cauliflower in the fridge for up to a week.

Preheat oven oven to 450 degrees.  Spray a cookie sheet with non-stick cooking spray.

In a medium bowl, stir together 1 cup of the cooked cauliflower, egg and 1/2 c of the cheese.  Add spices and stir.  Transfer to the cookie sheet and pat out to a 9" round crust.  Bake at 450 degrees for 15 minutes.

Remove from oven and add toppings.  Place under a broiler at high heat just until cheese is melted (approx. 3 - 4 minutes).

*Note the toppings need to be precooked before placing on pizza as it will only be broiled and not baked in the oven.

We used red and green peppers, mushrooms and a little bit of ground pork.
