Mason Jar Salads

This is such a great idea for lunches for work or for a picnic.  These can be made a couple of days ahead of time if you layer them properly.  You can add any of your favorite veggies or fruits or any salad fixings like craisins or nuts - starting with the dressing first.  Then it's best to put in something like peas or carrots as it will take on a little flavor of the dressing without spoiling like the lettuce or spinach would.  You can turn them upside down and give them a shake when you're ready to enjoy them or empty the contents onto a plate.  The salads shown above are prepared in 1 L jars with a little room to spare and they are each under 200 calories a piece.   These are like pizzas in that they combination possibilities are endless!
