Tilapia Tacos

4 sm. soft tortillas
1 1/2 c. shaved lettuce
1/2 c. sliced red onion
1 c. diced tomato
1/2 c carrot sticks
1/2 c. crushed pineapple, drained
1/3 c. fat free greek yogurt
1 t. tex mex seasoning
1 t. lime zest
2 tilapia fillet, baked as directed on pkg.
1 lime cut into 4 wedges

Lay out tortillas.  On one half layer lettuce, onion, tomato and carrot.  Mix greek yogurt, lime zest and seasoning.  Spread about 2 t. of the mixture on each of the other half of the tortillas.  Place half a fillet on each of the tortillas on top of the yogurt mixture.  Top each with 1 T. pineapple.  Squeeze juice from lime wedge over each.

* We used Blue Water Simply Bake Tilapia Classic Seasoning - you may choose to use your favorite type of fish, but remember that will change the calorie count.

* Some other recipes use a fruit salsa or avocado as toppings as well.
